Ingredients
Makes 12-15 balls
12 -14 Medjool Dates, pips removed
2-3tbs crunchy peanut butter (or nut butter of choice)
1/2 cup shredded coconut
1 cup puffed quinoa
2tbs linseeds
2tbs sesame seeds
2tbs sunflower seeds
2tbs boiling water
1tsp vanilla extract
Pink Sea Salt to taste
Directions
1. Place the dates & boiling water in a high speed blender and for a minute or so, until broken down into a crumb like mixture.
2. Add the remaining ingredients to the blender and mix until a cookie crumble like mixture forms.
2. Roll the mixture into small balls. Transfer to an air tight container. Store in the fridge for 1-2 weeks or in the freezer for a longer life span.
