If I could be a Vegetarian I would be. Unfortunately my individual make-up won’t allow for it. Between my blood type, 0+, and this phase of life, I have a tendency to air on the side of Anaemic. So alongside Iron Infusions, I’ll eat lean a little red meat periodically. Just like in the Blue Zones, as a ‘feasting food’ of sorts being the most organic way I can integrate it into my diet. For me, my preference for being mainly plant based is as much spiritual as it is metaphysical. And I do believe our bodies change and adapt through the ages, so hopefully one day I can be entirely vegetarian. But for now, I’ll settle for ‘mainly’. On that note, this is one of my favourite Vegan friendly meals. It’s cosy, comforting, satisfying and as delicious as it is nutritious and easy. I hope you love it too xoxo

Ingredients
Serves 2
1 sweet potato, peeled and sliced
2 white potatoes, peeled and sliced
2 handfuls of snow peas, finely sliced
1 head bok choy, washed, trimmed and sliced
1 zucchini, sliced into rounds
1 head broccoli, chopped
1/2 block firm organic tofu, cubed
1 handful spinach
1tbs EVO
1tbs Sesame Oil
2tbs Tamari
Juice of half a lime
Sea Salt to taste
Directions
1. Preheat oven to 190degrees. Line a baking tray with baking paper. Bonus points for boiling potatoes until slightly softened.
2. Spread the potato wedges evenly on the baking tray. Add 1tbs EVO, season with sea salt, mix to coat thoroughly. Transfer to the oven for approximately 30 minutes or until golden and crispy.
3. Around 10 minutes prior to removing from oven, season Tofu with Sea Salt and a drizzle of Tamari, then add to the tray. Once all condiments are golden and crispy, remove and set aside.
4. Boil a small pot of water, salt generously. Add broccoli florets. Boil for 3 minutes, remove and allow to cool.
5. Heat 1tbs Sesame Oil in a large skillet over medium heat. Add the Zucchini and sauté until slightly golden. Add the Broccoli, snow peas & bok choy sauté until leaves have wilted. Add the crispy tofu, fresh spinach, a dash of lime and a splash of Tamari. Mix to combine, remove from heat.
6. Assemble your plate, adding the greens and tofu mixture with a side of crispy potatoes. Add an extra splash of Lime, Tamari and enjoy xox
