Nothing brings back the flavours of summer like a sweet & tangy watermelon salad. The first time I made this salad was in my 20s. I’d walk home from the beach whilst living overseas, buy some watermelon from the market and return to my cousin’s apartment to make the most beautiful watermelon Salad. Though it’s evolved since then, it always brings back the feeling of summer. Hard to put into words, but those fleeting memories of endless afternoons and balmy nights come rushing back. Refreshing, light and cleansing, this Salad really is perfect for a hot summer’s day. Enjoy it on its own or with your favourite protein for a heartier meal.

Ingredients
Serves 2
5-6 slices of watermelon, cubed
2 handfuls of mint leaves, roughly chopped
1 Lebanese cucumber, diced
4 stalks of celery, sliced
12 cherry tomatoes, halved
1 tomato, chopped
2 handfuls mixed leaves
Sprinkle of feta
12 olives, pitted and diced
2tbs pine nuts, lightly toasted
2tbs slithered almonds, lightly toasted
2tbs balsamic vinegar
Juice of half a lime
Sea Salt to taste
Directions
1. Divide the Salad ingredients between 2 serving bowls. Sprinkle with Feta and pine nuts.
2. Dress with balsamic vinegar, lime and a sprinkle of sea salt. Mix gently to combine. Serve and enjoy xox
